Plain Chicken Salad

Chicken breasts, cooked use as many as you think you need
I poach 2 for the two of us
about 1/4 cup Celery, diced
about 1 small Onion, diced,
2 or 3, diced Green onions,
2-3, diced Hard boiled eggs,
Sweet bread and butter pickles, minced in a mini food processor or by hand,
(not regular pickle relish)
Salt and pepper to taste
Mayonnaise, use a good quality, it makes a difference
1-2 Tbsp French salad dressing or a good honey mustard salad dressing

Dice the cooked chicken into bite size pieces. In a mixing bowl, add all
ingredients except the mayonnaise and French dressing. In a small bowl,
combine the mayonnaise and dressing and stir until well mixed. The
dressing should be faintly pink or use as much as you like. Mix the
dressing mixture into the chicken and vegetables, mix gently but
thoroughly. Salt and pepper to taste, I don’t add the salt because the
dressing has enough salt for us. Chill a few hours for the flavors to
blend. Serve for sandwich’s or on lettuce leaves.
