Lemon-Herb Grilled Chicken
3 - 3 1/2 pound broiler-fryer chicken, cut up
1/3 cup olive or vegetable oil
1/4 cup lemon juice
1 tablespoon chipped fresh or 1/2 teaspoon dried basil
2 teaspoons chipped fresh or 1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cloves garlic, crushed
Arrange chicken in rectangular dish (11 x 7 x 1 1/2 inches). Shake remaining
ingredients in tightly covered container; pour over chicken. Turn chicken to
coat well. Cover and refrigerate at least 3 hours.Prepare charcoal fire for
grilling. Microwave 8-10 minutes on high in tightly covered dish. Then, place
chicken, skin side down, 5-6 inches from coals on grill. Reserve marinade.
Cover and grill chicken 10 minutes, turn. Cover and grill 10-15 minutes more,
brushing occasionally with marinade.
