Fee Fi Fo Fried Chicken
2/3 cup flour
1 tsp dried oregano
1/2 tsp each dried thyme, paprika, and salt
1/4 tsp garlic powder and black pepper
1-1/2 cup crushed corn flake cereal
2 Tbsp parmesan cheese
1 cup buttermilk
3 lb chicken thighs and drumsticks about 12 pieces
Spray large roasting pan with non stick spray. Set aside. In a shallow
bowl or pie plate combine flour, oregano, thyme, paprika, salt, pepper,
and garlic powder. In a separate bowl combine parmesan cheese and corn
flake crumbs. Pour buttermilk into another bowl. Rinse chicken and pat
dry. Dip chicken into buttermilk, then flour, again in buttermilk and then
in crumbs. Place chicken in pan leaving a little space between pieces.
Bake uncovered at 425 for 40 minutes. Serve immediately.
