Grandma’s Chicken Soup

1 fresh chicken, cleaned inside and out
10 large carrots sliced in thick chunks
1 small rutabega sliced thickly (don’t leave this out, it makes the soup
really good!)
2 medium onions sliced thickly
4 stalks of celery sliced in large pieces
pinch of saffron (this is more for color than taste)
tablespoon of parsley flakes
salt and pepper to taste
cooked egg noodles or rice

Put the first 8 ingredients in a large pot and cover with cold water.
Bring to a boil and then simmer for what seems like days (OK, 4 hours is
good…but it will feel like longer because the aroma will drive you
crazy with hunger!)
Pull the chicken out (I’ll admit this is not easy) and debone the entire
thing. Discard the bones and skin. Shred the chicken and put it back in
the soup.
Add cooked egg noodles or rice

Remember: Chicken Soup will NOT make you feel better unless you EAT it..
So if you don’t want to eat… Add the squirt of Lemon Juice and enjoy
and become healthy
