Lime Chicken Thighs
6 to 8 skinless chicken thighs with bone-in
1 1/2 Tbsp olive oil
1 1/2 Tbsp butter
2 Tbsp lime juice
1Tbsp parsley flakes
1 1/2 Tbsp hot jalapeno jelly - melted
salt and pepper to taste
In heavy skillet brown chicken in olive oil and butter. 15 min total,
turning every 5 minutes. Remove to baking dish & salt and pepper. With
paring knife cut 3 slits into each thigh and brush on jelly. Bake 30 min @
350 remove to serving dish and top with lime juice and parsley
