Spanish Thighs
2 tablespoons olive oil
1/4 cup onion — chopped
1 clove garlic — chopped
1 cup red pepper — sliced
2 1/2 pounds chicken thighs — boneless and skinned
garlic salt
pepper
ground coriander seed
cumin
1 cup mushrooms — sliced
Heat olive oil in a saute pan. Add minced garlic and chopped onion. Gently
cook until onion is soft–about 3 minutes. Add red peppers.
Sprinkle chicken thighs with garlic salt, pepper, coriander, cumin. Brown in
the same pan with garlic and onion. Continue cooking about 10 minutes. Add
mushroom slices. Saute for another 5-7 minutes or until mushrooms are done. I
will sometimes add sliced zucchini.
